What is Candy School: Science, Technology, & Application?
The Candy School: Science, Technology, & Application, a.k.a. “Candy School,” is a two-week course where participants learn the science and technical details of how candies are produced – and then make various batches of them, adjusting ingredients to see what happens. The course begins by covering the chemical and functional interactions of ingredients and then advances to more complex subject matter including processing, troubleshooting, reworking and sensory analysis. Learning from industry experts, participants will gain hands-on laboratory experience with all types of candies.

Cost: The cost of the course is $4,495. This covers tuition, laboratory materials, reference workbooks, daily lunches, welcome mixer and banquet dinner.
Additional details: This course is open to all. Sessions are held in-person and are taught entirely in English. Candy School is an expanded, more technical version of the week-long Introduction to Candy Science Course offered through the Department of Food and Nutritional Sciences. It is recommended that participants have technical or scientific training/backgrounds.
